Competition Open To:

Any chef permanently and solely employed at the qualifying Clubs/ Livery Halls with a minimum of two years of kitchen experience.  There are only 12 FINALISTS possible, an eliminating heat may be necessary if entry is over subscribed.  This will be decided by the Judges from the written entries.

ONLY ONE ENTRANT PER CLUB WILL BE PERMITTED.

The following constitutes the specification for The Town & Country Club Chefs Pastry Challenge:

Stage 1 - Paper Entry

  • You are required to write a costed recipe for an individual chocolate dessert using
  • Felchlin Maracaibo 65% Couverture and Maracaibo 38% Couverture.
  • You can use both or singularly for your recipe
  • Town & Country Fine Foods will also provide the couverture to practice with prior to the final.
  • Please also provide a photograph of your dish
  • You should also enclose a copy of your current CV with your completed entry form.
