TOWN & COUNTRY FINE FOODS CLUB CHEFS PASTRY CHALLENGE

Competition Open To:
Any chef permanently and solely employed at the qualifying Clubs/ Livery Halls with a minimum of two years of kitchen experience. There are only 12 FINALISTS possible, an eliminating heat may be necessary if entry is over subscribed. This will be decided by the Judges from the written entries.
ONLY ONE ENTRANT PER CLUB WILL BE PERMITTED.
The following constitutes the specification for The Town & Country Club Chefs Pastry Challenge:
Stage 1 -
Stage 2 – Practical Final
If you have been successful in your application you will report to Westminster College at 2pm on Monday 10th July.
3 weeks prior to the final you will receive a classical recipe for a dessert that you will also be required to cook on the day of the final.
In addition to this you will also be required to produce for two people your recipe for your individual chocolate dessert.
Competitors will be supplied with all ingredients for the Classical Dessert and the Felchlin Couverture for their individual chocolate dessert. All other ingredients will need to be supplied by the competitor.
Competitors are to supply any specialist equipment that they require.
Competitors must not wear or bring items that identify their Club and hats must be worn.
Any variance from the submitted recipe may lead to a loss of points.
Timetable for the Competition
Competitors will be judged on working methods, professional techniques, skills, hygiene, timing, and balance, quality of flavours, textures and preparation.
The Organisers will provide:
Plates for each of the dishes or if you wish to bring your own proffered serving dish, but it must have no identifying logo.
Ingredients for the classical dessert
Felchlin Couverture for individual chocolate dessert
The results of the competition will be announced on the same day at Westminster Kingsway College. Finalists can bring one guest. Dress for the prize giving is lounge suit and tie for men and smart casual for the ladies, refreshments will be served.
1st Prize will be a trip to a Felchlin Chocolate Workshop in Kondirama Switzerland which will include a sightseeing tour of the area on the last day. The name of the winner and his /her Club/ Livery Hall will be inscribed on the Town & Country Fine Foods Challenge Cup. The Cup will be kept by the winning Club until the next Competition.

3rd Prize Afternoon tea for two at The Dorchester Hotel
